When Eric de Rothschild visited Aussières in 1999 he was immediately charmed by this place of untamed beauty, with amazing soul and history. The 170 hectares at the center of the estate had been used to grow grapes for the better part of the last 2000 years.

 

Over the past 20 years, tremendous work and investments have been engaged in both the vineyard and the winery, and Aussières is now recognized as one of the spearheads of Languedoc's renewal.

VINEYARD ATTRIBUTES
 

Appellation : IGP Pays d'Oc

 

The estate, Domaine d'Aussières, is nestled in the rugged hills just behind the Mediterranean coastline of Narbonne, in the South of France.

​

Terroir : The soils are very shallow and rocky on the slopes, and deeper and sandy on the plain. Yields are voluntarily kept very low in order to preserve the vines and ensure the production of high quality grapes.

OUR WINE

Aussières Blanc has a rich, complex nose in which one finds notes of flowers (lily of the valley, broom), patisserie (butter, brioche), ripe fruit (apricots) and honey.
On the palate, the attack is round, and the wine has a lively, fresh character. There is the minerality that also constitutes Aussières Blanc’s identity, and which here underscores a broad palette of fruity (tart apple, cider apple), and sweet dessert notes. A hint of freshly grated hazelnut brings the wine to a very harmonious finish.

Varietals : Chardonnay 70%, Sauvignon blanc 10%,

Vermentino 7%, Bourboulenc 5%, Roussanne 3%,

Grenache blanc 3%, Marsanne 2%

A beautiful intense colour with glints of plum and offers an excellent representation of the red Aussières character. The nose has a rich aromatic profile, with pronounced Mediterranean aromas typical of our terroir: sweet
spices, liquorice, stewed garrigue fruit such as figs, redcurrants, strawberry tree and a hint of almond. On the palate, the wine is very harmonious, revealing a pleasant balance.
Soft, elegant tannins, accompanied by notes of smoked tea and cigar. With a multi-faceted character, Aussières Rouge is a very flexible wine that can be consumed on almost any occasion and be paired with a wide variety of foods.
